Simple Beet Salad

If you’re a fan of beets like me, you’re in for a treat! This beet salad recipe is not only delicious, but also incredibly easy to make. Whether you’re looking for a healthy side dish or a light lunch, this salad is sure to satisfy your taste buds. Let’s get started!

Ingredients

Fresh Beets – I like baking beets however, you can cook them instead.

Red onion – Yellow onion would work as well.

Fresh lemon – Lemon gives extra flavor to the dish. If you don’t have lemon, you can add approximately 1 tablespoon balsamic vinegar.

Garlic – I like adding garlic to many dishes. You can skip this step if you’re not fan of garlic 🙂

Sugar – I like to add little sugar but you can use other sweetener such brown sugar or blue agave. You can also skip this step.

Ingredients

  • 6 large fresh beets, approximately 3lbs

  • 1 medium red onion, finely chopped

  • 1 garlic clove

  • 1 tsp sugar

  • 1.5 tablespoon fresh lemon juice

  • salt and pepper to taste  

  • ¼ tsp cumin, optional

Directions

  • Preheat oven for 400°F
  • Cut larger beets in half. Place beets in a baking dish and cover with foil. Bake approximately 45-60 minutes. Check beets into 30 minutes of baking. Please note that beets should be firm tender.
  • When beets are cool enough to handle, make sure to use gloves because it’s hard to wash their juice from the hands. Peel the skin from the beets, it should come off easily. Grate beets on the large holes of the grater or use food processor.
  • Transfer mixture to a large bowl and add chopped red onion, sugar, little cumin (optional), salt and pepper to taste. Add juice from half fresh lemon, or more to taste. If you do not have a lemon, you can use 1tsp of vinegar, or more to taste.
