Jump to RecipeAs a child, one of my absolute favorite salads was sauerkraut salad. It’s a simple yet delicious dish that brings back fond memories of family gatherings and picnics. The best part is, it’s incredibly easy to make! Whether you prefer using a food processor or a grater, this recipe is sure to satisfy your taste buds.
To make sauerkraut salad, you’ll need:
- Sauerkraut – Strain all the liquid out of your sauerkraut. This liquid is potent with live cultures. I like to save it to apply as the acid component in vinaigrette, I also drink it too and even add it to my smoothies!
- Carrots
- Tart apples – I love using tart apple for this recipe however, you can use any apple you have at home.
- Onion – Yellow or red onion would work fine with this recipe. If you like to add extra color to the recipe, use red onion 🙂
- Garlic
- Parsley Root
- Celery root – Celery root has a strong smell and taste. I would suggest to use 1/5 of cup and see if you like it. You can always add more.
- Fresh Parsley – I love to add parsley to this recipe however, fresh dill would taste great as well.
- Extra virgin olive oil or avocado oil – I like to use high quality oils to all my recipes but if you’re on budget, you can use any oil you have at home.
- Sugar
- Salt and pepper to taste

Sauerkraut Salad

1 jar or pouch of sauerkraut
2 medium carrots, graded
1 big crisp, tart apple (granny smith), graded
1 red or yellow onion, shopped
1 big garlic clove, minced
¼ cup of parsley root, graded
¼ Celery root
1 cup fresh parsley, chopped
1 teaspoon sugar
Salt and pepper to taste
1 tablespoon extra virgin olive oil or avocado oil
Directions
- Strain all the liquid out of the sauerkraut. Next, place the sauerkraut into a medium-sized serving bowl.
- Dice the onion add that into the bowl.
- Grate carrots, parsley root, celery root and add into the same bowl.
- Add extra virgin olive oil or avocado oil. Add salt and pepper to taste.
- Lastly, add chopped fresh parsley into the mixture. Gently mix everything until combined. Add more salt and pepper if needed.
