Spicy and Crispy Roasted Potatoes

2lb russet potatoes
1/2 teaspoon salt
1 teaspoon paprika
1/4 teaspoon black pepper
1 teaspoon cayenne pepper
1/2 teaspoon garlic powder
2 tablespoon avocado oil

Directions
- Preheat your oven to 425°F (220°C).
- Wash and scrub the potatoes to remove any dirt. You can leave the skin on for added texture and flavor.
- Cut the potatoes into bite-sized pieces, ensuring they are all roughly the same size to ensure even baking.
- In a large bowl, combine the olive oil, paprika, cayenne pepper, garlic powder, salt, and black pepper. Mix well to create a spicy seasoning. Add the potato pieces to the bowl and toss them until they are evenly coated with the seasoning.
- Transfer the seasoned potato pieces in a single layer on the baking sheet. Place the baking sheet in the preheated oven and roast the potatoes for about 30-40 minutes, or until they are golden brown and crispy. Half way into baking, toss potatoes.
