550 g fresh mushrooms, sliced
1 big yellow onion, chopped
3 cloves garlic, minced
1/5 cup dry mushrooms
5 cups vegetarian broth
1/2 cup sour cream
1 teaspoon dried thyme
1 bay leaf
3 tablespoon all-purpose flour
5 tablespoon butter
1 tablespoon vegetable powder, or more to taste
salt and pepper to taste
fresh parsley, chopped to serve
fresh thyme, to serve optional
Directions
- In a large saucepan, melt butter and add onion. Fry onion on medium-high heat for about 7 minutes or until light brown.
- Add mushrooms, dry mushrooms, and one garlic clove. Fry on medium heat for about 3 minutes.
- Pour in the vegetable broth and bring to boil. Lower the heat. Add bay leaf, dried thyme, vegetarian powder, salt, and pepper. Cover and simmer on low heat for about 8-10 minutes, while stirring occasionally.
- In the meantime, in a separate dish such as mud, add sour cream, flour, and 1,5 cup water. Mix mixture with the whisk until combine. Add mixture slowly to the soup while stirring. Add two minced garlic cloves and simmer for another couple minutes. Turn off the heat.
- Serve soup as is or use hand blender and blend until creamy.
