Ingredients
To make a delicious homemade vegetable broth, gather a variety of fresh vegetables:
- 3 – 4 medium carrots
- 3 – 4 stalks celery
- 1 yellow onion, with skin
- 1 garlic head, peeled
- 1/2 parsley root
- Fresh parsley or dill
- 1 Leek
- 1 cup of kale, optional
- 1 cup green cabbage
- 2 bay leaves
- 1/4 teaspoon allspice
- Salt and pepper to taste
- 1 tablespoon extra-virgin olive oil
- 2 Tablespoon dry vegetables mix, optional
Don’t hesitate to add in any leftovers or seasonal veggies you have on hand! Such broccoli, cauliflower, mushrooms etc.
How to Prepare Your Broth
In a large pot, combine these vegetables with 10 cup of water, and bring to a boil. Once boiling, reduce the heat and let it simmer until vegetables are soft. This cooking process allows the flavors to mingle beautifully. After simmering, strain the liquid using a fine mesh sieve or cheesecloth, discarding the solids. Your homemade vegetable broth is now ready to be used in soups, sauces, or as a flavorful base for various recipes!
