Ingredients

  • 16 oz jar of roasted red peppers, drained

  • ¾ cup unsalted roasted almonds

  • ¼ cup oil-packed sun-dried tomatoes, rinsed and drained

  • 2 medium cloves of garlic, peeled

  • 1 teaspoon smoked paprika

  • 1 tablespoon red wine vinegar or sherry vinegar

  • 2 Tablespoon  extra-virgin olive oil

  • ½ teaspoon sea salt, or more to taste

  • ½ teaspoon cayenne pepper, optional for some heat

  • ¼ cup of fresh parsley, optional

Directions

  • Add all ingredients to the food processor or blender and blend until smooth and creamy. If the sauce is too thick, you can add a little water to thin it out.
  • Taste the sauce and adjust the seasonings according to your preference. Add more salt, pepper, cayenne pepper, or smoked paprika if desired.
  • You can serve immediately or transfer the romesco sauce to a jar or airtight container and refrigerate for up to 7 days.
